Summer love
Try this shrimp tacos with pineapple salsa recipe
BY DANIELLE ROSE
While the rest of the country celebrates the first day of summer, Floridians brace for it. It marks the beginning of hurricane season, as well as the return of relentless heat, humidity, and mosquitoes. Despite all that, I still love summer. It’s a little quieter; the pace is a little slower; and we adapt to the climate. When long summer days stretch on and dinner time rolls around, I’m not preparing an elaborate meal. I’m not even turning on the oven, if I can help it. I start reaching for the easiest recipes, and I lean into all the amazing tropical fruit that’s in season — in my own backyard. Those vibrant flavors revive us after a long, hot day.
This recipe for shrimp tacos with pineapple salsa checks all the boxes for a perfect summer meal, even on a weeknight. They’re a breeze to prepare. The star of the show is perfectly ripe pineapple. When shopping for pineapple, choose one with a deep golden hue that’s fragrant and feels heavy for its size. It should give slightly when pressed at the base. If you have a sunny spot in your yard, re-plant the top of the pineapple. They’re beautiful plants, and eventually you’ll be rewarded with another pineapple.
